Quinoa Taco Bowls
INGREDIENTS:
1 tsp oil (grapeseed or avocado)
1 cup uncooked quinoa
1 pound ground beef or turkey
1 Tbsp of chili powder
2 tsp garlic powder
1 tsp cumin
1 tsp oregano
½ tsp salt
½ tsp paprika (optional)
1-2 avocados, cut into cubes
1 tomato, chopped
1 red pepper, chopped (optional)
½ red or white onion, chopped
Shredded Mexican style cheese
Bunch of cilantro, chopped
Optional: shredded romaine lettuce, clean hot sauces, corn, black beans
INSTRUCTIONS:
Cook the quinoa according to the package directions in water or broth.
Heat oil in a large skillet over medium high heat. Add ground meat and cook until browned, about 3-5 minutes, making sure to crumble the meat as it cooks.
Place desired amount of quinoa and meat in bowls. Serve toppings as a taco bar and let everyone create their own delicious bowl!
NOTES:
I set up a taco bar with all of the toppings as my kids like to create their own combinations for dinner!
Goes well with Amy’s refried beans. Can also make lettuce wraps using green cabbage or butter lettuce leaves.
Dish can be prepped in advance for a quick week day dinner.
