Superfood Energy Bites
INGREIDENTS:
1 cup Cashews (Can soften in water for an hour if desired)
1 cup Pitted Dates
1 cup Unsweetened Shredded Coconut
1/4 cup Goji Berries
2 tbsps Pumpkin Seeds
1 tbsp Chia Seeds
1 tbsp Whole Flax Seeds
3 tbsps Cacao Powder (Rounded tablespoons) 1/4 tsp Sea Salt
1 tsp Cinnamon
1 tbsp Water
1 tbsp Coconut Oil
3 tbsps Cacao Nibs (Or around a handful, optional ingredient)
DIRECTIONS:
Blend all ingredients in a food processor.
Form into balls (It is helpful to let the dough chill in the fridge for a while beforehand. If the batter is too dry, add a little warm water or coconut oil).
NOTES:
No cashews? Use almonds or experiment with other nuts
