Roasted Delicata Squash
INGREDIENTS:
1 delicata squash
EVOO
sea salt
optional: cinnamon
INSTRUCTIONS:
Pre-heat oven to 400 degrees.
Wash the outside of the squash and then slice it into 1/4 inch slices (remove and discard the ends). Using a grapefruit or regular spoon scrape out the seeds.
Place the sliced squash on a baking sheet lined with parchment paper and spray with the olive oil and a little salt and/or cinnamon, if desired.
Bake the squash for 15-20 minutes, flipping once halfway through cooking until they are browned on both sides.
Serve immediately and enjoy.
NOTES:
I also use this squash to make my Delicata Smoothie Bowl. Simply cut the squash in half lengthwise, scrap out the seeds and roast for around 30 minutes or until the inside is soft.
